I love rainy days! This morning we've been cuddling up in our pjs and listening to the rain and watching Avery's recent obsession 'Mickey Mouse playhouse.' Of course I am the one provoking this infatuation because I want to go to Disneyland in a couple months and you can't go to there if you don't know who Mickey & Minnie are, right? :)


We took these photos of Avery last week on a rainy day, or rather, Collin took these pics of our little girl. Now I am going to say something that is recited over and over by the mouths of mothers, "She is growing up so fast!" I'm sure I'll be repeating that the rest of my life-but she is. One thing for sure is that she's not growing out of her love for rain boots. First the froggies, now the kitties. If you would like to book a photography sesson with Collin let me know...seriously!

Sundays are a perfect day for baking. Yesterday I stuffed my face with the yummiest pumpkin cookies, not to mention, the easiest recipe...
1 box of 'Spice' cake mix
1 can of pumpkin
& a bag of chocolate chips.

Speaking of yummy recipes... Paper Crafts released a new book. Want one? It's full of eye-candy craft projects and delicious recipes. Not to mention that the book itself is gorgeous and you'd want to leave it out on your counter top. (the photo below doesn't do it justice:)

Castillian Hot Chocolate!
INGREDIENTS (Serves 6)
1/2 cup unsweetened powdered cocoa
1 cup sugar
7 tsp cornstarch (cornflour)
1/2 cup water
4 cups milk

PROCEDURE
(1) Mix the cocoa and sugar together.

(2) Dissolve the cornstarch (cornflour) in the water
and combine with the cocoa-sugar mixture in a
medium-sized saucepan. Stir this until it is a
smooth paste.

(3) Begin heating this mixture, continuously stirring
it with a whisk. Gradually pour in the milk.
Continue stirring as you bring it to a simmer.

(4) Simmer, stirring often, for about 10 minutes. The
cocoa is ready when it thickens and is glossy and
smooth.

NOTES
The consistency of the finished product should resemble cho-
colate pudding that didn't quite set. If you halve this
recipe, you'll get just the right amount for two large mug-
fulls. This cocoa is especially fantastic when you dip
churros into it

Sure, I want one. Apple crisp. I have bags of frozen apples in the freezer so all I have to do is take a bag out, throw the apples in the pan, cover with crisp topping and bake. yummy.

One of my family's favorites is Potato and Ham Chowder. I make it in the crock pot with onions and a pepper gravy mix, let it cook all day, and then sprinkle with cheese. Yum!!

Although I may be pretty unconventional--I got married at 20, I have an infatuation with tattoos (though only two are visible), and my favorite band is Nine Inch Nails--I still like to go a traditional route on a rainy day: soup. I am not that particular about what kind, but making my own is always the best feeling. Since I live in the dorms in college, and I now have a kitchen, I can throw a pot of soup on and listen to the rain against the windows and watch the cloudy skies in my courtyard. It's the perfect rain-soaked day for me :-)

Let's see what do I like on a rainy day, well, here in San Antonio, TX, rainy days are usually really muggy, so ice cream is the best to have. It's a instant cool down to the high-level humidity we get down here. My fav is Blue Bell's Bananna Split.

My favorite treat to make is pumpkin chocolate chip muffins. Recipe from Becky Higgins! But I enjoy making these on any kind of day. They are so quick and easy and delicious. My kids love them. I just finished making a batch for breakfast and then I can put them in their lunches this week! Yum Yummy!

Rainy or snowy weather definitely brings out my inner baker. My favorite: chocolate chip cookies. Although sometimes they don't make it to the oven and we just eat the dough.

Ok...so I look easy recipes, and this one is so yummy! Enjoy!

Chicken Cheese Ball:
10 oz. can chunk chicken
1 packet of Hidden Valley Ranch dry dressing
1 package of cream cheese (softened)

Shred chicken into finer pieces. Add both of the other ingredients and mix thoroughly. Shape into ball. You could also roll the ball into cracker crumbs, if you wish. Serve with crackers or chips.

On rainy days, I love to go BUY a Pumpkin Spice Latte from Starbucks and curl up w/ a good book. But, since I have 4-year-old twins, that free time is hard to come by.

I love to MAKE a pork roast in our crock pot so you smell it cooking all day, then make home-made corn bread to go with it. Yum!

Madi loves Micky Mouse Clubhouse too. We live 15 minutes from Disneyland so we go all the time with our passes. It is an obsession heeee!

I love rainy days and stuffing my face with yummy goodness. =) My favorite treat right this second is Pumpkin Gooey Butter Cake. Ooooohhhhh sooooo delicious. I am making it this Friday for our small group and I can't wait to devour it. I have been eyeing that new book...so pick me! =)

By far my favorite lately has been the cheerio bar (with leftover Halloween M&M's)
Melt: 3 T. Butter, 16 oz. marshmallows, and 1/2 c. creamy peanut butter. When melted stir in 5 cups cheerios and 1 cup m&m's. Put into greased 9x13 pan. Try not to eat the whole pan!

I love to bake, especially on rainy days. I love to make cookies and decorate each one differently with Royal Icing. It takes forever, but I think it's worth it. I have a really good recipe for cookies that don't spread out when you bake them and hold the cookie cutter shape you started with.

Hot herbal tea with honey and then I drip teddy bear cookies in there and eat them with a spoon. :) Or same with hot chocolate. Or cinnamon buns. Or ginger snaps. ANything spicy and warm.

I make my mother-in-law's albondigas (meatball) soup with fresh tortillas for lunch and have it later for dinner too. For a snack we love hot cocoa with tons of marshmallows and snuggle with a blanket and watch a movie.

Chocolate cookies! Just made them yesterday, So good!!!
2 C. Flour
3/4 C. Baker's Cocoa Powder
1 tsp. Baking Soda
1/2 tsp. Salt
1 1/4 C. Unsalted Butter (softened)
2 C Sugar (Plus more for dipping)
2 Large Eggs
2tsp. Vanilla Extract

Sift together flour, cocoa, baking soda, and salt. Set aside. Beat butter, sugar, & eggs on medium speed until light and fluffy (about 2 mins.). Add vanilla and mix to combine. Gradually add flour mixture and combine on low speed. Cover bowl with plastic wrap, pressing down on top of the dough itself.
Chill until firm (about 1 hr.). Heat oven to 350. Roll dough into 1' balls and then coat it in the sugar reserved for dipping. Place on baking sheets 1 1/2' apart. Bake until set (about 7-9 mins.). Cool for 5 mins.

These Ain't Yo Mama's Brownies...
1 box brownie mix, 1 can of vanilla frosting, 1/2 C salted peanuts, 2 C rice krispies, 1/2 C creamy peanut butter, and 1/4 C chocolate chips. Make brownies, let cool. Spread frosting on brownies, throw on the salted peanuts, then put in fridge. Melt peanut butter and chips in micro (about 30 secs), mix in rice krispies, take out brownies, spread krispies on top of frosting and chill for 10-15 min. Cut up and chow down!

On rainy days we like a simple tomato soup with grilled cheese sandwiches or my Dad's Chili recipe with cornbread. For a special rainy day treat the kids and I bake up some Pumpkin Spice muffins similar to the recipe you shared.
YUM!

The best treat ever.. Here's what you do:
1. Make up a batch of peanut butter cookie dough - you can use a mix or any recipe that you love
2. Preheat the oven as you would for your cookies, and ball up the dough into teaspoon sized portions... But instead of putting them on a cookie sheet, put one ball of dough into a mini muffin tin!
3. Bake until golden brown, and when you pull them out of the oven, place a mini Reese's cup (don't forget to take off the wrapper!!) in the center.

This is the best little bite sized treat.. And make sure to make a lot because they go FAST!!

I'm not a big rainy day baker but when it snows, I bake and cook. I bake chocolate chip cookies and peanut butter cookies and make soup every time. I live in VA so we dont' get a lot of snow. When we do, I like to be in the kitchen. And the soup is usually chicken rice or minestrone. NOW, I want it to snow!! And I am so excited to start my holiday baking and I want this book! What a beautiful picture of Avery. Thank you for sharing. My favorite thing to make is some sort of bread, either banana or pumpkin and also have a soup cooking in the crockpot. Nothing hits the spot like a hot cup of soup with a grilled cheese!!!

My daughter has those same kitty boots. She grew out of her other pair and I was lucky enough to find another pair, because that is what she was wanting. Who knows what would have happened if we could not have found another kitty pair. ;-)

I do this pumpkin and spice cake mix and 1 cup of water and make them into muffins - they are wonderful!!!! (also, they are only one point on Weight Watchers - hopefully you don't have to worry about that!!)

Thought I'd get a chance to make some soup as fall weather finally arrived here in Southern California but then heard it will be 94 degrees this Fri & Sat so I guess the soup will have to wait. I guess I can make some pumpkin cookies instead. ;-)

In South Africa we love making "Pannekoek" on rainy days. It is a soft pancake you traditionally sprinkle with sugar and cinnamon and roll up in a cigar shape. Lots of savoury and sweet fillings are also used. Yummy!

Those pictures of Avery are amazing! Trust me when I say kids grow up WAY too fast! My baby boy will be driving soon :( Where did the time go?!

As for rainy days, I love a cup of Yerba Mate Chai tea and a hot cinnomin bun or pumpkin bar. For dinner, Taco soup or Thai Red Curry Chicken, which is soup-like.

That book looks amazing and fun!

ummmm....my two FAVORITE things! Paper crafts and baking! Fun rainy day treats: chocolate covered pretzels. My kiddos love putting a crazy amount of sprinkles on them.

My girls and I love to make Chocolate Chip cookies. So on a rainy day we make cookies and watch Goonies. Gotta Love It!!

I am trying to lose weight right now so I try not to make dessert. If i could I would make white chocolate macadamia nut cookies or a dessert that my grandma makes called "quick dessert" obviously it's quick to make.

My favorite treat on a rainy day is hot herbal tea. I love to fill my teapot with hot water, throw in some hot loose green tea, and enjoy multiple cups of yummy tea while I'm cozy inside my house.

Nothing better than snickerdoodles!!! I love the Lion House recipe...they always come out perfect and there are plenty to share with the neighbors too! :) Love your blog - I think you're fabulous. I went into Pebbles several times while you worked there - I love that store!

honestly i am a awful cook---but at home on a rainy day there are 2 things i will or can make...homemade buns and i know this sounds pathetic but.....jello!!! love the nee photos...she is just too cute--ad cletus does a darn good job!

Apple tea cake is absolutly the best thing to make. There's nothing like a moist buttery cake infused with delicious stewed apples and sprinkled with a layer of cinnamon sugar, a cup of tea ( or hot chocolate), and a good book to make the most of a rainy afternoon. Best of all the mixture only takes about 5-10 minutes to make. Gotta love easy cooking.

It's raining here today and when I get home from work, I just may make this childhood treat with my kids...when I was little, my mom used to put peanut butter and marshmallows ontop of a slice of bread and then lightly roast/bake them in the oven so that the mallows get a bit brown, and the bread gets toasty. It's heaven and takes me back to age 8.

I love to make Santa Fe/Taco Soup: Don't have the receipe in front of me but it goes something like this:
1 lb ground meat brown with a onion.
1 can kidney beans
1 can black beans
1 can pinto beans
1 can corn (drained)
1 can crushed tomatoes
1 small packet of dry taco seasoning
1 packet of hidden valley ranch dry seasoning
About 2 cups of water
Salt & Pepper
All the cans use the juice and all except the tomatoes. Brown the meat first and then throw everything in and bring to a boil simmer until beans are done. SO EASY
Serve with crushed tortialla chips,shredded cheddar cheese and a dap of sour cream on top.
So Yummy!

OH GOOD GRIEF!!! How can I possibly compete with these women for this book?!? Doesn't it just warm your heart to know that so many people read your blog?! How about how incredibly talented these women are?!!! Wow is all I can say. Now here is my stab---> We like to make Cracker Sweets. This is horrible but I am going to tell you a secret! We call it "Crack"! Two reasons; one, it is short for cracker but mostly, two, you can't stop eating it!!! Don't eat these if you care about your thighs. That or go for a run with your studly hubby. (I have one of those too, he played professional soccer - yea that makes my knees weak, and I have to smack my girlfriends chins back up whenever he walks into the room. (I couldn't leave them alone with him, they would maul him! not really, they are trust worthy!) The funny part is he has NO IDEA he is so cute!!) Anyway these are not just plain fattening, they are SOUTHERN FATTENING! (For those of you who don't know what I mean, come on to Kentucky or Mississippi & I'll give ya'll a quick tour - we have FRIED Twinkies on a stick here girl!!)Anyway, hope I gave you enough of a chuckle to reward me with the book and a good recipe to fatten you up if not!
Cracker Sweets:
2 sticks BUTTER, 1C sugar, 1-2 sleeves saltine crackers, 6oz. semi-sweet chocolate chips, 6oz. peanut butter chips.
Preheat oven to 400*. Line Jelly roll pan with parchment paper. Line paper with cracker squares & set aside. In pan on stove, melt 2 sticks of Butter (not margarine) with 1cup of white sugar stir together with wood spoon. Bring to a boil and keep there for 3 minutes stirring CONSTANTLY. Take off heat and pour over crackers. Spread to coat. Place pan in oven for 7 minutes. Take our and let sit 1 minute. Sprinkle chips over pan. Let sit a miute or two and spreat melted chips over all. Put in fridge for 30 minutes or more. Take out and break apart to eat!

Our family all likes something different! I just tried the pumpkin cookies you mentioned and now I'm addicted!
However, I like popcorn! My kids like cupcakes and no-bake cookies, and my hubby loves hot out of the oven chocolate chip cookies! I like to make them all for them but eat popcorn!

I'm all about the COMFORT FOOD on a rainy day...cuddling up with a nice hot cup of chai, or a steaming bowl of my mom's beef stew or some homemade mac and cheese. Something about that kind of weather just makes me want to cook for hours!!
