I love rainy days! This morning we've been cuddling up in our pjs and listening to the rain and watching Avery's recent obsession 'Mickey Mouse playhouse.' Of course I am the one provoking this infatuation because I want to go to Disneyland in a couple months and you can't go to there if you don't know who Mickey & Minnie are, right? :)


We took these photos of Avery last week on a rainy day, or rather, Collin took these pics of our little girl. Now I am going to say something that is recited over and over by the mouths of mothers, "She is growing up so fast!" I'm sure I'll be repeating that the rest of my life-but she is. One thing for sure is that she's not growing out of her love for rain boots. First the froggies, now the kitties. If you would like to book a photography sesson with Collin let me know...seriously!

Sundays are a perfect day for baking. Yesterday I stuffed my face with the yummiest pumpkin cookies, not to mention, the easiest recipe...
1 box of 'Spice' cake mix
1 can of pumpkin
& a bag of chocolate chips.

Speaking of yummy recipes... Paper Crafts released a new book. Want one? It's full of eye-candy craft projects and delicious recipes. Not to mention that the book itself is gorgeous and you'd want to leave it out on your counter top. (the photo below doesn't do it justice:)

And alittle plug for me and possibly a better chance at winning the book (wink wink) I live near Disneyland - only 2 hours from where I live. While you are visiting with Mickey and Minnie - I would love to book Collin for a photo shoot his pics are fabulous. I am getting a new camera for Christmas and can't wait to get those kind of results!!

BTW I have bookmarked your playlist - I listen to it just about everyday I love it!!! ok that was long - did I suck up enough for the book ??? LOL!!!

Well I don't necessarily have a great rainy day treat but I do have a recipe to share. It's BLT dip. Very (I stress VERY) unhealthy but Oh so good. You cook 1lb. of bacon until crispy mix it will 1 cup of mayo, 1 cup of sour cream, 1 diced medium-large tomoato, let refrigerate for a few hours and serve with toast or crackers. I serve mine with multi-grain crackers. Delicious!!!

Our favorite thing to bake is Cupcakes. With all the different sprinkles out there you can make them for any season! The little ones can help too. Love the photos. I wish my hubby would grab the camera sometimes. Have a wonderful rainy day. I can't wait for some to hit Southern California.

Rainy days mean indoor picnics. We pack a little basket and head to the family room for a fun time. Finger sandwiches, chips, raw veggies, and our travel drinks. then pop in a good movie and enjoy...

My favourite treat for a perfect inside day: newly discovered last Friday: a whole-wheat-applesauce-cinnamon-brown-sugar-and-pecan-half-on-top-muffin - THEY WERE UNBEATABLE THE BEST MUFFINS I EVER MADE!
If you had asked one week earlier i would have said "The best brownies in the world" from the "Crazy for chocolate"-book by Trish Desine!!!

I love to bake...so my fav would be choc chip cookies.
As far as drinks go it's a toss up between hot chocolate or hot apple cider. Then for dinner..I love to cuddle up with a piping hot bowl of chili complete with cheddar and some fritos! WOW!! That's a lot of stuff and it's rainy..so I need to get crackin'! :)

Ooo...Fun Book! Soup is a must on a cold, rainy day. We call it "Papa Soup" at our home!...Just a simple, home-made vegetable beef soup, but extra yummy and full of love since it's my dad's one specialty. I love your blog, Liz! I always look forward to the next post, no matter what the subject!

Well I understand the need for Disneyland... even though I am only 10 minutes from it... I can't get enough of it... especially seeing it through my 4 years olds eyes.... The magic is there that is for sure....
Just a hint... if you are planning a get away to disney in Anaheim... the best days to go are tuesday and wednesday....but never during the holidays!! But if you make it during the winter months... you will see the most beautiful lite up castle ever!!!

And on a rainy day...when we have them here... you can never go wrong with Chocolate Chip Cookies... straight from the oven of course...nice and HOT!!!

It actually rained here in Southern California this weekend. On Saturday morning, I whipped up a batch of Pumpkin Waffles and the house smelled HEAVENLY. With a hot cup of coffee, it was bliss!

I like to make chocolate chip cookie dough. No need to bake. Just eat the dough. Yum. And if there is any left, then you can freeze it for later to eat more dough. The best no bake cookies around.

I agree with the grilled cheese & tomato soup vein. Although I do get picky and need colby/monterey jack cheese with (preferably) Sarah Lee potato bread. I was lacking both when my husband and I went on an internship for him to Philadelphia. Rainy days just weren't the same.

I make Choc. chip cookie dough(from scratch) with mini choc. chip morsals. Instead of putting them on a cookie sheet to bake use a mini muffin pan. Cook for about 8minutes when they come out of the oven let them cool for 2 minutes then gently press a mini peanut butter cup in them. Cool again then pop them in your mouth. There is NO WAY you can eat just one.

Treats, hm... cookies and tea, but the yummiest (and not as difficult as it sounds) dinner we made last week when it was cold and rainy is: (you can make it ahead and freeze it, too, and it's still yummy!:)) Sorry about the long comment!
Chicken Noodle Casserole

1/2 c plus 2 T butter, divided
1/2 c all-purpose flour
3 c rich chicken stock
2 c sour cream
1/2 c white wine
dash nutmeg
salt and freshly ground black pepper, to taste
1 lb egg noodles, cooked 6 to 7 minutes
4 1/2 c cooked chicken, cut into pieces
1 lb mushroom, sliced and cooked
1 c soft bread crumbs
1/2 c Parmesan cheese, freshly grated

Preheat oven to 350 degrees F.

Clean and slice the mushrooms and sauté in a 2 tablespoons butter until soft and slightly browned, about 7 minutes.

Remove crusts from 2 or 3 slices of fresh bread and with steel blade in food processor, process bread until soft crumbs form.

Melt 1/2 cup butter in a saucepan, over medium heat, and whisk in the flour. Cook 1 minute. Gradually add stock, sour cream and wine. Cook until thickened, stirring constantly. Add nutmeg, salt and pepper to taste and blend well. Arrange the noodles in an ovenproof casserole. Layer chicken, mushrooms then sauce to cover.

Melt remaining 2 tablespoons butter and mix with the bread crumbs. Top the casserole with the buttered crumbs and sprinkle with Parmesan. Bake for 30 minutes, or until heated through and bubbly.

Serving idea: have with buttered green beans and biscuits.

Lemon Snowflakes or Chocolate Krinkles (made from same recipe depending on the cake mix used)

1 pgk (18.25 oz) lemon cake mix with pudding (use choc cake mix if wanting chocolate krinkles)
2 1/4 cups whipped topping
1 egg
powdered sugar

In mixing bowl, combine cake mix, whipped topping and egg. Beat with an electric mixer on medium speed until blended. Batter will be VERY sticky. Drop by teaspoonfuls into powdered sugar; roll lightly to coat. Place on ungreased baking sheets. Bake at 350 for 10-12 minutes or until lightly browned. Yield 5-6 dozen.

Our family favorite desert to make is...
Frozen Lemonade Cake

1 carton of vanilla ice cream (softened)
1 12oz can frozen lemonade defrosted a little bit

Mix these two ingredients together for the ice cream cake

Crust:
12 graham crackers
1/2 cup melted butter
4 Tbs. sugar

Mix these ingredients together to make the crust. Evenly coat on the bottom of a 9x12 dish. After the crust pour the ice cream mixture over the crust and freeze until ice cream is frozen.

So YUMMMY! And yet so EASY! I hope I win the book! I am a big desert girl!

The year-round rainy day treat is popovers. I like to make a roast in the oven (any kind will do) and serve warm, crusty, eggy popovers full of gooey warm butter spilling out of them! Hmmm, we have grey skies but no rain--send it this way!

My Favorite rainy day treat is banana nut bread and hot chocolate with marshmallows. Although, I do have to make a loaf with nuts and a loaf without nuts as my girls do not like nuts in theirs! LOL!

What a beautiful picture of Avery! I sure wish I could take pictures like that! Believe me if Georgia was not so far away I would definitely book a photography session!

Definitely apple crisp. Just cut up apples and put the crisp on top.
For a 9x13 pan-

2 1/4 cup rolled oats
3/4 cup flour
1 1/2 cup packed brown sugar
3/4 tsp. salt
3/4 tsp. cinnamon

Mix it up and spread over the top. Cook at 350 degrees for 35-40 minutes. (can also be used with peaches, pears, plums, or cherries.)

Delish! Tastes just like the apple crisp at Red Robin.

Hi Elizabeth,
Here is an awesome pumpkin recipe I like to make on a rainy day.

1 yellow cake mix
1 15oz. Can of libbys pumpkin pie filling
1 tsp. nutmeg
1 tsp. cinnamon
3 eggs
1 12 oz. can evaporated milk
1 1/2 c. sugar
1 c. walnuts
1 c. melted butter

Mix pumpkin, nutmeg, cinnamon,eggs, milk, and sugar.
Pour into 9x13 greased cake pan.
Sprinkle dry cake mix on top.
Sprinkle walnuts on top of cake mix
Drizzle 1 c. butter on top of walnuts.

Bake @ 350 for 1 hr.

When I was a kid on rainy days my grandma always had a batch of top of the stove cookies(also known as no bake cookies) ready for us after school...now not enough time to make them...by the way when my niece (3 yr old) was here this summer, I HAD to get her the kitty rain boots during our shopping excursion ..much to her mother's dismay she alternates between them and her cowboy boots I got her!

MMMMmmmm... there are so MANY yummy rainy day yummies! We LOVE a good crockpot full of potatoe and beef goodness, or banana bread fresh out of the oven with butter melting on each slice... or even a killer grilled cheese with fresh tomatoe slices and fresh basil leaves.

And the first person that commented and said 'diet coke cupcakes' I'm totally going to google those... WHAT IS THAT? Sounds heavenly ;)

Disneyland is the best...we just got back from Halloween Time a couple weeks ago, so fun. Collin's pictures are beautiful - rainy days have the best lighting!

My favorite treat to make on a rainy day is Mint Hot Chocolate. And not just ANY mint hot chocolate...this one!!

One cup hot chocolate +
2 andes mints on the bottom =
stir it up and it is pure heaven!!

My sweet husband came up with that one to cure my mint craving and I make it especially when it is cold outside!!! Those cookies on that book look SOOOO good too!!

Right now - nothing because I'm 10 weeks pregnant and am miserably sick. But....when I'm not sick my new favorite rainy day treats are Andes Mint cookies (from Becky Higgins blog) I keep the Andes Mints on hand just in case! They're DELICIOUS and they look so fancy though they are super easy to make.
